Carne Asada

Ingredients

2 lbs skirt steak, trimmed of excess fat.

Carne Asada Marinade

  • 1 jalapeño, seeded and minced

  • 4 cloves garlic, minced

  • 1/2 cup fresh cilantro leaves, chopped

  • Juice of 1 orange

  • Juice of 1 lime

  • Juice of 1 lemon

  • 2 tbsp apple cider vinegar

  • 1/3 cup olive oil

  • 1 tsp ground cumin

  • 1 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

Instructions

In a large glass dish or mixing bowl, whisk together all marinade ingredients until fully combined.

Add skirt steak in a single layer and coat well in the marinade. Cover and refrigerate for at least 1 hour and up to 8 hours (do not exceed 8 hours or the texture may break down).

When ready to cook, preheat grill to medium-high heat.

Grill steak for 7–10 minutes per side, turning once, until desired doneness (medium-rare recommended).

Remove from grill and let rest for 5 minutes.

Slice thinly against the grain and serve.
