Beef Heart & Tongue Tacos

Beef Heart
Bee Tongue
Bay leaves (2)
Salt
Pepper
Garlic (3 cloves)
White onion
Pickled Jalapenos
Cilantro
Lime Juice
Beef Tallow
Tortillas (we love the mi rancho organic yellow corn tortillas)
Hot Sauce (we love Trader Joe's Taqueria salsa)
Instructions
Boil tongue in pot with onion, garlic, salt, pepper and bay leaf. Bring to a rolling boil then reduce to a simmer for 3-5 hours depending on the size of the tongue. You will know it is done when you can easily pierce it with a fork. Remove the tongue from the pot to cool just enough to handle and then peel off the tough outer skin. Chop tongue into bite sized pieces and then pan fry in beef tallow to until crisp.
Trim heart of any fat, silver skin or connective tissue and chop to your ideal size to pan fry. You can marinate in whatever marinade you’d like at this point but that is optional and up to your preference. Season heart with your preferred spices. Add chopped heart to pan with tallow and cook 1-3 minutes on each side depending on the thickness of the cuts. Do not over cook or it will become very tough. Aim for medium rare.
Warm up tortillas in pan or on stove and then assemble the tacos. Add the onions and jalapeños then top with cilantro, lime juice and hot sauce.

Serve with warm tortillas, grilled onions, fresh cilantro, salsa, guacamole, or lime wedges.
